POE is hygroscopic, so an open can of it works as a moisture pump - it will pull water out of the air right through a plastic container. Buy the smallest sealed metal container that covers the job, pour it, cap it, and skip the habit of decanting leftovers into a jug. Water plus POE makes acid, and acid is what kills windings weeks after a repair that otherwise went fine. Same reason you pull a real vacuum down to 500 microns any time a POE system gets opened.

POE or mineral oil - how do I know which one my system takes?
The refrigerant decides. Mineral oil pairs with R-22 and the other old CFC and HCFC systems. POE pairs with everything HFC and HFO - R-410A, R-407C, R-404A, R-454B, R-32. Mineral oil will not return to the compressor in an R-410A or R-454B system, so it logs in the evaporator while the compressor runs dry. Most R-454B equipment takes POE 32, and R-32 systems often call for POE 46 because discharge temperatures run hotter. Check the compressor label.
Why does the can have to stay sealed?
POE is hygroscopic. It pulls water vapor straight out of the air, and North Texas humidity is plenty to do it. Water and POE do not simply mix, they react - the oil hydrolyzes into acids and alcohols, and that is not reversible. Acid is what eats windings and copper. POE will even absorb moisture through plastic, so it belongs in a sealed metal container, and an opened can is not something to save on a shelf for next season.
Can I mix POE and mineral oil?
The trace mineral oil left behind after a retrofit is tolerated, but do not top a POE system with mineral oil or the reverse. After a burnout, do not try to salvage old oil at all. Change the liquid line drier, get out what you can, and put in fresh oil of the right type and viscosity.
Do I need to add oil after a repair?
Usually not. A normal compressor or coil change on a residential split does not call for extra oil, and too much oil costs you capacity. Add oil only to replace a measured amount you removed, or when the manufacturer says to.
